Ingredients

8 oz feta cheese

2 medium beets, cooked

1/2 cup pistachios, chopped

2 tbsp honey

2 tbsp olive oil

2 tbsp lemon juice

Black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and wrap the beets in aluminum foil.
  3. Roast the beets for 30-45 minutes until fork-tender. Allow to cool and peel the skins.
  4. In a food processor, combine feta, olive oil, lemon juice, and black pepper.
  5. Blend until the mixture is creamy and smooth.
  6. In a serving bowl, layer the whipped feta at the bottom and chop the cooled beets over the top.
  7. Drizzle honey over beets and sprinkle with chopped pistachios.
  8. Serve with pita chips, crackers, or veggies for dipping.

Notes

For a vegan option, substitute feta with tofu or plant-based cheese and use maple syrup instead of honey.
