- 2 carrots, chopped
- 2 stalks celery, chopped
- 4 cups vegetable or chicken broth
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Prepare the ingredients: Wash and chop onion, garlic, carrots, and celery.
- Sauté vegetables: In a large pot, heat olive oil over medium heat and add onions, cooking until translucent.
- Add garlic and other vegetables: Mix in garlic, carrots, and celery; cook until softened.
- Incorporate tomatoes and broth: Stir in tomatoes and broth, bringing it to a gentle boil.
- Add bulgur: Stir in bulgur, reduce heat to simmer, cover and cook for 15-20 minutes.
- Season and finish: Adjust seasoning with salt, pepper, and lemon juice; let sit for a few minutes.
- Serve: Ladle soup into bowls, garnishing with fresh herbs if desired.
