Description

A rich and creamy potato gratin featuring smoky bacon and melted reblochon cheese.


Ingredients

  • 2 lbs Yukon Gold or Charlotte potatoes, peeled and sliced
  • 8 oz smoked bacon or lardons
  • 1 lb reblochon cheese, halved horizontally
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 tsp grated nutmeg

Instructions

  1. Prepare the potatoes: Peel and slice the potatoes into thin rounds, rinse under cold water, and pat dry.
  2. Cook the bacon and onion: Sauté lardons until crispy, then add onions and garlic until translucent.
  3. Layer the ingredients: In a greased baking dish, layer half of the potatoes, followed by half the bacon & onion mixture, and half the cream. Repeat the layers.
  4. Add the cheese: Place the reblochon cut-side down on top of the layered ingredients.
  5. Bake: Preheat oven to 375°F (190°C). Cover with foil and bake for 30 minutes, then remove foil and bake an additional 15 minutes.
  6. Garnish and serve: Let rest for 5 minutes before serving.

Notes

Best served with a simple green salad and paired with white wine.
