A nutritious and delicious breakfast option utilizing sweet potatoes for a healthy start to your day.


Ingredients

  • 2 medium Sweet Potatoes, peeled and cubed
  • 1 cup Rolled Oats
  • 2 cups Almond Milk
  • 1/2 cup Greek Yogurt
  • 1 tablespoon Maple Syrup
  • 1 teaspoon Cinnamon
  • Chopped Nuts (Walnuts or Pecans)
  • Fresh Fruits (Berries or Banana)
  • Chia Seeds

Instructions

  1. Peel and cube the sweet potatoes.
  2. In a pot, bring water to a boil. Add sweet potato cubes and cook for 10-15 minutes until tender.
  3. Drain and mash the sweet potatoes until desired consistency.
  4. In a bowl, combine rolled oats and almond milk, bring to a simmer for 5-7 minutes.
  5. Stir in the mashed sweet potatoes, maple syrup, and cinnamon until heated through.
  6. Spoon into bowls and top with yogurt, nuts, fresh fruits, and additional maple syrup if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to a month.
