- 2 medium Sweet Potatoes, peeled and cubed
- 1 cup Rolled Oats
- 2 cups Almond Milk
- 1/2 cup Greek Yogurt
- 1 tablespoon Maple Syrup
- 1 teaspoon Cinnamon
- Chopped Nuts (Walnuts or Pecans)
- Fresh Fruits (Berries or Banana)
- Chia Seeds
Instructions
- Peel and cube the sweet potatoes.
- In a pot, bring water to a boil. Add sweet potato cubes and cook for 10-15 minutes until tender.
- Drain and mash the sweet potatoes until desired consistency.
- In a bowl, combine rolled oats and almond milk, bring to a simmer for 5-7 minutes.
- Stir in the mashed sweet potatoes, maple syrup, and cinnamon until heated through.
- Spoon into bowls and top with yogurt, nuts, fresh fruits, and additional maple syrup if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to a month.
