2 Sweet Potatoes, peeled and grated
2 Beetroots, peeled and grated
1/2 cup All-Purpose Flour (or gluten-free flour)
2 Eggs (or flaxseeds for vegan option)
1 Onion, finely chopped
2 cloves Garlic, minced
1 tsp Cumin
1 tsp Paprika
1/2 tsp Black Pepper
1 tsp Salt
2 tbsp Oil for frying
Instructions
- Peel and grate the sweet potatoes and beetroots into a large mixing bowl.
- Add onion, garlic, flour, eggs, spices, and salt; mix until well combined.
- Heat oil in a non-stick skillet over medium-high heat.
- Shape the mixture into small patties, about 2 inches in diameter.
- Fry the fritters for 3-4 minutes on each side until golden brown.
- Remove excess oil by placing on paper towels and serve warm.
Notes
For a dairy-free dip, mix coconut yogurt with herbs. Ensure to squeeze out excess moisture from the vegetables for best texture.
