2 pounds Russet potatoes
1/2 cup milk
1/4 cup butter
Salt and pepper to taste
2 cups shredded cheese

Instructions
- Prepare the Potatoes: Peel and chop the Russet potatoes into even chunks. Place in a pot of cold, salted water and bring to a boil. Cook for about 15-20 minutes until fork-tender.
- Mash the Potatoes: Drain the potatoes and return to the pot. Add butter, salt, and pepper. Mash and slowly pour in the milk until creamy.
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Shape the Nests: Grease a muffin tin and spoon mashed potatoes into each cup, creating a well in the center.
- Add the Filling: Fill each well with shredded cheese and your choice of cooked protein.
- Top with More Potatoes: Cover the filling with more mashed potatoes and sprinkle extra cheese if desired.
- Bake to Perfection: Bake in the preheated oven for 15-20 minutes until tops are golden brown and cheese is melted.
