2 cups Fresh Strawberries, hulled and sliced
1 tablespoon Granulated Sugar (adjust to taste)
1 cup Heavy Whipping Cream
2 Egg Whites
1/2 teaspoon Vanilla Extract
1 tablespoon Lemon Juice
Instructions
- Prepare Strawberries: Hull and wash the strawberries. Pat dry and slice them into halves or quarters for easy blending.
- Blend Strawberries: In a blender, combine strawberries with granulated sugar and blend until smooth.
- Whip Heavy Cream: In a chilled mixing bowl, whip the heavy cream until soft peaks form.
- Whip Egg Whites: In another clean bowl, whip egg whites until stiff peaks form, about 3-4 minutes.
- Combine and Fold: Gently fold the strawberry puree into the whipped cream, then fold in the beaten egg whites.
- Add Flavor: Add vanilla extract and lemon juice, and fold gently to combine.
- Chill: Spoon the mousse into serving cups or a bowl, cover, and refrigerate for at least 2 hours.
- Serve: Top with fresh strawberries or whipped cream and garnish with mint leaves.
Notes
For a vegan version, substitute egg whites with aquafaba and heavy cream with coconut cream.
