Ingredients

1 package silken tofu

2 cups fresh spinach

2 cloves garlic, minced

1/4 cup nutritional yeast

2 tablespoons lemon juice

1 tablespoon olive oil

Salt to taste

Pepper to taste


Instructions

  1. Gather all your ingredients and measure them out.
  2. Heat the olive oil in a pan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Combine the sautéed garlic, silken tofu, spinach, nutritional yeast, lemon juice, salt, and pepper in a blender. Blend until smooth and creamy.
  4. Pour the blended sauce back into the pan and heat over low for about 5 minutes, stirring occasionally.
  5. Cook your favorite pasta according to package instructions. Drain and add to the sauce, mixing well. Adjust consistency with pasta water if needed.
  6. Serve hot, garnished with additional nutritional yeast or fresh herbs.
