- 1 cup breadcrumbs (whole wheat or gluten-free)
- 1/2 cup cheese (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions
- Cook the quinoa by rinsing it under cool water. Boil in 2 cups of water or vegetable broth, cover, and simmer for about 15 minutes until fluffy.
- In a skillet over medium heat, add olive oil and sauté minced garlic, carrots, bell pepper, and spinach for about 5 minutes until softened.
- In a large bowl, combine cooked quinoa, sautéed vegetables, egg, breadcrumbs, and cheese (if using). Season with salt, pepper, and any additional spices.
- Form the mixture into small balls or patties, about 1.5 inches in diameter.
- Preheat your oven to 375°F (190°C). Place quinoa bites on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown and crispy.
