Description

A refreshing Lebanese bean salad rich in nutrients and flavor, perfect for a healthy meal.


Ingredients

  • 1 can Cannellini Beans, drained and rinsed
  • 1 Red Onion, finely chopped
  • 1/4 cup Parsley, chopped
  • 2 tbsp Lemon Juice
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Rinse and drain the cannellini beans thoroughly under cold water.
  2. Chop the red onion finely and soak it in cold water if too strong for your taste.
  3. In a large mixing bowl, combine the drained beans, chopped onion, and parsley. Toss gently.
  4. Drizzle with olive oil and lemon juice. Season with salt and pepper, and fold gently.
  5. Sample and adjust seasoning or acidity as preferred.
  6. Let the salad sit for at least 10 minutes before serving. Serve chilled or at room temperature.

Notes

For a heart-healthy option, use sodium-free beans. This dish is inherently vegan and gluten-free.
