Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, approximately 3-4 minutes.
- Add coffee grounds and vanilla extract, blending until fully incorporated.
- Beat in the egg until fully combined, scraping down the bowl as needed.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing just until combined.
- Using a small cookie scoop, portion out dough onto prepared baking sheets, leaving space between each cookie.
- Bake for 12-15 minutes until edges are lightly golden and centers are slightly underbaked.
- Allow to cool on baking sheets for 5 minutes before transferring to a wire rack. Dust with powdered sugar once cooled.
