2 cups whole milk (or almond/coconut milk)
¾ cup granulated sugar (or brown sugar)
3 large eggs (or silken tofu)
1 teaspoon vanilla extract (or imitation vanilla)
2 tablespoons butter (or coconut oil)
¼ cup cornstarch (or arrowroot powder)
Pinch of salt
½ teaspoon nutmeg or cinnamon (optional)
Instructions
- In a medium saucepan, combine the milk, sugar, and salt. Stir over medium heat until the sugar dissolves completely.
- In a separate bowl, whisk together eggs and vanilla extract until fully combined.
- Gradually add a few tablespoons of the warm milk mixture into the egg mixture to temper the eggs.
- Pour the tempered egg mixture back into the saucepan and stir over medium-low heat until the mixture thickens.
- Remove from heat and add butter and nutmeg or cinnamon, stirring until the butter melts.
- Pour the pudding into serving dishes and refrigerate for at least 2 hours to set.
Notes
Serve topped with fresh fruits, whipped cream, or a drizzle of caramel for added flavor.
