2 cups blueberries
1/2 cup granulated sugar (divided)
2 tablespoons freshly squeezed lemon juice
4 sheets gelatin
1 cup heavy cream
1 teaspoon vanilla extract
4 egg yolks
1 tablespoon lemon zest
Instructions
- Prepare the Blueberry Mixture: In a saucepan, combine blueberries, 1/4 cup of granulated sugar, and lemon juice. Cook over medium heat until blueberries burst (5-7 minutes).
- Strain the Mixture: Strain through a fine sieve, reserving the syrup.
- Bloom the Gelatin: Soak gelatin sheets in cold water for 5 minutes.
- Prepare the Lemon Custard: Whisk together egg yolks, remaining sugar, lemon juice, zest, and blueberry syrup in a saucepan. Cook over low heat until thickened.
- Incorporate the Gelatin: Add soaked gelatin to the warm custard, stirring until dissolved.
- Fold in the Whipped Cream: Whip the heavy cream and fold it into the lemon mixture.
- Create the Domes: Divide custard into molds, top with blueberry compote, and cover with more custard.
- Chill to Set: Cover and refrigerate for at least 4 hours.
- Unmold and Serve: Gently remove from molds, drizzle with syrup, and garnish as desired.
Notes
For a plant-based option, substitute gelatin with agar-agar. Lime can be used in place of lemon for a different twist.
