1 ½ cups almond flour
1 cup confectioners’ sugar
3 large egg whites
½ cup brown sugar
1 tsp ground ginger
1 tsp cinnamon
¼ tsp nutmeg
½ tsp cream of tartar
Filling of choice (spiced buttercream or cream cheese frosting)
Instructions
- Preheat your oven to 325°F (160°C) and prepare your baking sheet with parchment paper.
- Whip the egg whites with cream of tartar until foamy, then gradually add brown sugar while whipping until stiff peaks form.
- Sift together the almond flour, confectioners’ sugar, ground ginger, cinnamon, and nutmeg.
- Gently fold the dry ingredients into the whipped egg whites using a spatula.
- Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
- Let the piped macarons rest at room temperature for 30-60 minutes.
- Bake for 15-20 minutes until they have formed feet and do not wiggle.
- Allow to cool completely before filling with your choice of filling.
