Ingredients

1 ½ cups almond flour

1 cup confectioners’ sugar

3 large egg whites

½ cup brown sugar

1 tsp ground ginger

1 tsp cinnamon

¼ tsp nutmeg

½ tsp cream of tartar

Filling of choice (spiced buttercream or cream cheese frosting)


Instructions

  1. Preheat your oven to 325°F (160°C) and prepare your baking sheet with parchment paper.
  2. Whip the egg whites with cream of tartar until foamy, then gradually add brown sugar while whipping until stiff peaks form.
  3. Sift together the almond flour, confectioners’ sugar, ground ginger, cinnamon, and nutmeg.
  4. Gently fold the dry ingredients into the whipped egg whites using a spatula.
  5. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
  6. Let the piped macarons rest at room temperature for 30-60 minutes.
  7. Bake for 15-20 minutes until they have formed feet and do not wiggle.
  8. Allow to cool completely before filling with your choice of filling.
