2 cups Heavy Cream (36% fat)
4 Egg Yolks
3/4 cup Granulated Sugar
1/4 cup Unsweetened Cocoa Powder
1/4 cup Molasses
1 tsp Ground Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Cloves
1/2 cup Espresso or Strong Coffee
2 Gelatin Sheets or 1 tbsp Powdered Gelatin
1 cup White Chocolate
Instructions
- In a saucepan, heat the heavy cream until steaming but not boiling. Whisk egg yolks and granulated sugar together in a bowl until pale and fluffy. Gradually pour hot cream into the egg mixture while whisking to temper the eggs.
- Stir in cocoa powder, molasses, and espresso until smooth. Add ground spices, mixing evenly.
- Soften gelatin in cold water. Once soft, add it to the warm mousse base, stirring until dissolved.
- Whip remaining heavy cream in a separate bowl until soft peaks form.
- Gently fold whipped cream into the mousse base, starting with a small amount to lighten the mixture.
- Pour the mousse mixture into silicone dome molds and refrigerate for at least four hours or until set.
Notes
Serve with whipped cream and grated chocolate. Pair with gingerbread cookies for a delightful experience.
