1 large egg
8 ounces cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
Instructions
- In a medium bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt until well blended.
- In a large bowl, beat the softened butter with sugar until light and fluffy, around 2-3 minutes.
- Mix in the molasses and egg until fully combined.
- Gradually add the dry ingredient mixture into the wet ingredients, mixing gently until just combined.
- Cover the dough and refrigerate for at least 30 minutes.
- In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheet, leaving enough space between each cookie. Create an indentation in the center of each cookie.
- Spoon a dollop of the cheesecake filling into the indentation of each cookie.
- Bake for 12-15 minutes until edges are golden and centers are set.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
