- 1/2 cup peanut butter (creamy or crunchy)
- 1 cup dark chocolate (70% cocoa or higher)
- 1/2 cup chopped peanuts
- 1/4 teaspoon sea salt
- Honey or maple syrup (optional, for drizzling)
Instructions
- Peel the ripe bananas and slice them into 1-inch thick rounds. Arrange them evenly on a baking sheet lined with parchment paper.
- In a small bowl, combine the peanut butter with a pinch of sea salt. For a smoother consistency, lightly warm the peanut butter in the microwave for 10-15 seconds.
- Spoon about a teaspoon of the peanut butter mixture onto half of the banana slices. Top each with the remaining banana slices to create little sandwiches.
- In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring well after each interval until completely smooth.
- Dip each banana sandwich into the melted chocolate, ensuring they are fully coated, then lift them out with a fork and allow excess chocolate to drip back into the bowl.
- Immediately sprinkle chopped peanuts over each chocolate-covered banana while the chocolate is still wet.
- Place the assembled snacks back on the parchment-lined baking sheet and freeze for at least 2 hours, or until completely solid.
Notes
For variations, consider using almond butter or dairy-free chocolate. Store in an airtight container in the freezer and consume within 2 months.
