  • 1/4 teaspoon sea salt
  • Honey or maple syrup (optional, for drizzling)

Instructions

  1. Peel the ripe bananas and slice them into 1-inch thick rounds. Arrange them evenly on a baking sheet lined with parchment paper.
  2. In a small bowl, combine the peanut butter with a pinch of sea salt. For a smoother consistency, lightly warm the peanut butter in the microwave for 10-15 seconds.
  3. Spoon about a teaspoon of the peanut butter mixture onto half of the banana slices. Top each with the remaining banana slices to create little sandwiches.
  4. In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring well after each interval until completely smooth.
  5. Dip each banana sandwich into the melted chocolate, ensuring they are fully coated, then lift them out with a fork and allow excess chocolate to drip back into the bowl.
  6. Immediately sprinkle chopped peanuts over each chocolate-covered banana while the chocolate is still wet.
  7. Place the assembled snacks back on the parchment-lined baking sheet and freeze for at least 2 hours, or until completely solid.
