1/2 cup walnuts, toasted and roughly chopped or left as halves

2 tablespoons extra-virgin olive oil (for brushing bread)

Fresh thyme leaves or chives, finely chopped (optional) – quantity to taste

Salt, to taste

Freshly ground black pepper, to taste

Honey, 1–2 teaspoons (optional)


Instructions

  • Preheat the oven to 350°F (175°C). Slice the baguette into 1/2-inch rounds and brush both sides with a little olive oil. Place on a baking sheet and toast 8–10 minutes, flipping once, until the edges are golden and crisp. Let cool slightly.
  • While the bread toasts, crumble the blue cheese in a small bowl. If you prefer a spreadable texture, mix in a teaspoon of cream cheese or a splash of yogurt to soften it.
  • Prepare the apricots so they’re neat and ready to stack. If the pieces are thick, slice them into thinner strips for easy biting.
  • Spread a thin layer of blue cheese on each warm toast. You want a light coat that warms with the toast but doesn’t overwhelm the bite.
  • Top each with a slice or strip of apricot, pressing gently to help it stay in place.
  • Add a walnut piece on top. For extra crunch, you can sprinkle a few chopped walnuts around the edge of each canape as well.
  • Finish with a light drizzle of honey and a pinch of thyme or chives. Season with a tiny kiss of salt and pepper if the cheese needs it. Serve promptly while the toast is crisp and the cheese is just-soft enough to melt slightly on the heat of the bread.
