- 2 boneless, skinless chicken breasts
- 1 cup crushed pretzels
- 1/2 cup all-purpose flour (or whole wheat flour)
- 2 large eggs, beaten
- 1 cup sharp cheddar cheese, shredded
- 2 tablespoons Dijon mustard
- 2 tablespoons butter
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pound the chicken breasts to an even thickness and season with salt and pepper.
- Set up three shallow bowls: one with flour, one with beaten eggs, and the last for crushed pretzels.
- Coat each chicken breast in flour, dip in eggs, then coat with crushed pretzels.
- Place the chicken on a baking sheet and bake for 20-25 minutes until cooked through and golden brown.
- In a saucepan, melt butter over medium heat, add flour to create a roux, whisk in milk until smooth, add cheese and mustard until melted.
- Serve the chicken drizzled with the cheddar mustard sauce.
Notes
For a crispy finish, spray chicken with cooking oil before baking. Allow to rest before slicing for juicier meat.
