2 pounds Russet potatoes
1 cup shredded cheddar cheese
1/2 cup cream cheese
1/4 cup chopped green onions
1 teaspoon garlic powder
Salt and black pepper to taste
1 cup breadcrumbs
Instructions
- Prepare the Potatoes: Peel and cube the Russet potatoes. Boil in salted water for 15-20 minutes until fork-tender.
- Mash: Drain and return potatoes to the pot. Add cream cheese, garlic powder, and seasoning. Mash until creamy.
- Add Cheese and Onions: Fold in cheddar cheese and green onions while potatoes are warm.
- Form the Bites: Allow mixture to cool, then scoop and shape into bite-sized balls.
- Coat in Breadcrumbs: Roll each ball in breadcrumbs until evenly coated.
- Bake or Fry: For baking, preheat oven to 400°F (200°C) and bake for 25 minutes until golden. For frying, heat oil in a skillet and fry until crisp.
