1/2 cup rolled oats

1/2 cup unsalted butter (or coconut oil)

1/2 cup packed brown sugar (or maple syrup)

1/2 cup granulated sugar (or coconut sugar)

1 cup fresh or frozen cherries, pitted and chopped (or dried cherries)

1 large egg (or flaxseed meal mixed with water)

1/2 teaspoon vanilla extract (or almond extract)

1/2 teaspoon baking powder

1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
  2. In a large mixing bowl, whisk together the flour, oats, baking powder, and salt.
  3. In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the creamed mixture and mix until just combined.
  5. Gradually add the dry ingredients into the wet mixture and stir gently.
  6. Fold in the chopped cherries until evenly distributed.
  7. Pour the mixture into the prepared baking dish and spread evenly.
  8. Bake for 25 minutes or until a toothpick inserted comes out clean. Allow to cool before cutting into squares.

Notes

For a gluten-free version, use gluten-free flour. To achieve a less sweet bar, consider replacing granulated sugar with a less sweet alternative.
