Delightful Cherry Bars that provide a healthier alternative to traditional holiday desserts, combining the flavors of nutty oats and sweet cherries.
Ingredients
1 cup all-purpose flour (or gluten-free flour)
1/2 cup rolled oats
1/2 cup unsalted butter (or coconut oil)
1/2 cup packed brown sugar (or maple syrup)
1/2 cup granulated sugar (or coconut sugar)
1 cup fresh or frozen cherries, pitted and chopped (or dried cherries)
1 large egg (or flaxseed meal mixed with water)
1/2 teaspoon vanilla extract (or almond extract)
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
- In a large mixing bowl, whisk together the flour, oats, baking powder, and salt.
- In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the creamed mixture and mix until just combined.
- Gradually add the dry ingredients into the wet mixture and stir gently.
- Fold in the chopped cherries until evenly distributed.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 25 minutes or until a toothpick inserted comes out clean. Allow to cool before cutting into squares.
Notes
For a gluten-free version, use gluten-free flour. To achieve a less sweet bar, consider replacing granulated sugar with a less sweet alternative.
