Description

Delicious chocolate muffins packed with nutritious spinach, perfect for a healthy snack or breakfast.


Ingredients

Fresh Spinach (2 cups)

All-purpose Flour (1 ½ cups)

Cocoa Powder (½ cup)

Granulated Sugar (1 cup)

Baking Powder (1 tsp)

Eggs (2 large)

Unsweetened Applesauce (½ cup)

Vanilla Extract (1 tsp)

Dark Chocolate Chips (½ cup)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, blend the fresh spinach with the eggs and applesauce until smooth.
  3. In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, and sugar.
  4. Pour the spinach mixture into the bowl with the flour mixture and stir gently until just combined.
  5. Carefully fold in the dark chocolate chips.
  6. Grease a muffin tin or line it with paper liners and spoon the batter into each cup, filling them about two-thirds full.
  7. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them onto a wire rack.

Notes

For a vegan alternative, substitute eggs with flaxseed meal mixed with water.
