Ingredients
Fresh Spinach (2 cups)
All-purpose Flour (1 ½ cups)
Cocoa Powder (½ cup)
Granulated Sugar (1 cup)
Baking Powder (1 tsp)
Eggs (2 large)
Unsweetened Applesauce (½ cup)
Vanilla Extract (1 tsp)
Dark Chocolate Chips (½ cup)
Instructions
- Preheat your oven to 350°F (175°C).
- In a food processor, blend the fresh spinach with the eggs and applesauce until smooth.
- In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, and sugar.
- Pour the spinach mixture into the bowl with the flour mixture and stir gently until just combined.
- Carefully fold in the dark chocolate chips.
- Grease a muffin tin or line it with paper liners and spoon the batter into each cup, filling them about two-thirds full.
- Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them onto a wire rack.
Notes
For a vegan alternative, substitute eggs with flaxseed meal mixed with water.
