Instructions
- Preheat your oven to 400°F (200°C).
- Lightly grease a mini muffin tin with cooking spray or melted butter.
- In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.

- Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
- Place the muffin tin in the preheated oven and bake for about 12-15 minutes.
