Description

A delicious appetizer featuring fresh artichokes stuffed with a flavorful mixture of Parmesan cheese, garlic, and breadcrumbs, baked to golden perfection.


Ingredients

4 Fresh artichokes

1 cup Grated Parmesan cheese

1 cup Breadcrumbs (panko recommended)

3 Minced garlic cloves

2 tablespoons Olive oil

Juice of half a lemon

Salt and pepper to taste


Instructions

  1. Prepare the Artichokes: Rinse artichokes, snap off the outer leaves, and cut the stems for stability.
  2. Preheat the Oven: Heat oven to 375°F (190°C).
  3. Make the Stuffing: In a bowl, mix Parmesan cheese, breadcrumbs, minced garlic, olive oil, and lemon juice until combined.
  4. Stuff the Artichokes: Pull apart leaves and fill each base with stuffing, drizzling remaining olive oil on top.
  5. Bake: Place in a baking dish with 1 cup of water, cover with foil, bake for 25 minutes, then uncover and bake for another 5-10 minutes.
  6. Serve: Let cool slightly and serve with lemon wedges and fresh herbs.

Notes

Can be made vegan with nutritional yeast instead of Parmesan and flaxseed meal as a binder. For gluten-free, use gluten-free breadcrumbs or crushed nuts.
