1/2 cup all-purpose flour
3/4 cup sugar
1/2 cup unsalted butter, softened
3 large eggs
1 cup fresh or dried cranberries
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon almond extract

Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan with butter or line it with parchment paper.
- In a large mixing bowl, combine the almond flour, all-purpose flour, baking powder, and salt; whisk together.
- Cream the softened butter and sugar in a separate bowl until light and fluffy.
- Beat in the eggs one at a time, followed by the almond extract.
- Gradually add the dry mixture to the creamed butter and sugar, folding gently to combine.
- Fold in the cranberries evenly throughout the batter.
- Pour the batter into your prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a vegan version, replace eggs with flax meal mixed with water and use coconut oil instead of butter. Adjust baking time as necessary when using frozen cranberries.
